What we know about it

Life in a rhythm of moisture and calm

Helix aspersa maxima, now often also referred to as Cornu aspersum maxima, is a large garden snail bred in Europe for culinary use. At the farm, this is still exclusively a small trial breeding project.

Activity

It is most active in damp conditions, at dusk and at night. During the day it seeks shade and shelter.

Food

It feeds mainly on plant material and needs a steady source of calcium to form a strong shell.

Reproduction

It is hermaphroditic. After mating, it lays eggs in moist, loose soil.

Winter dormancy

At low temperatures it reduces its activity and enters a dormant period.

A forgotten Czech ingredient

Snails are not originally a Czech ingredient, but snail meat has a long culinary tradition in the Czech lands. It appeared in historical cookbooks, in Lenten cuisine and on festive tables. Today it is one of the almost forgotten ingredients being rediscovered by small breeders and gastronomy.

The breeding project is in a trial phase. We do not currently offer snails for sale or consumption.
